Sweet dishes include basbousa, which is a semolina cake with coconut and sugar syrup. Baklava is a very sweet puff pastry strudel with a walnut filling. After baking, it is soaked in a sugar solution. Tahini can be considered a sesame sauce used in salads, chickpea paste, hummus and pastries. It is prepared from ground sesame, has a smooth consistency and a high calcium content.
